Samosas: These crispy, savory pastries are popular throughout the Muslim world. You can fill them with a variety of ingredients such as spiced potatoes, minced meat, or vegetables. Here's a simple recipe for vegetable samosas:
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons vegetable oil
- Water (for dough)
- 2 potatoes, boiled and mashed
- 1 cup peas
- 1 onion, finely chopped
- 2 green chilies, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- Oil for frying
- Salt to taste
- In a mixing bowl, combine the flour, oil, and a pinch of salt. Add water gradually to form a smooth dough. Cover and let it rest for 30 minutes.
- In a pan, heat some oil and add cumin seeds. When they start to splutter, add the chopped onion and green chilies. Sauté until the onions are translucent.
- Add the mashed potatoes, peas, garam masala, turmeric powder, and salt. Mix well and cook for a few minutes. Remove from heat and let it cool.
- Divide the dough into small balls. Roll out each ball into a circle and cut it in half.
- Take one half and form a cone, sealing the edges with water.
- Fill the cone with the potato filling and seal the top edge tightly.
- Heat oil in a deep pan and fry the samosas until golden brown and crispy.
- Serve hot with chutney or sauce.
