Harira Soup

 


This traditional Moroccan soup is hearty and nutritious, perfect for breaking the fast. It typically contains tomatoes, lentils, chickpeas, spices, and sometimes meat. Here's a basic recipe you can follow:

Ingredients:

    • 1 cup lentils
    • 1/2 cup chickpeas (canned or cooked)
    • 1 onion, chopped
    • 2 tomatoes, diced
    • 1/4 cup chopped cilantro
    • 1/4 cup chopped parsley
    • 2 tablespoons olive oil
    • 1 teaspoon ground turmeric
    • 1 teaspoon ground ginger
    • 1 teaspoon ground cinnamon
    • Salt and pepper to taste
    • 6 cups vegetable or chicken broth
  • Instructions:
    1. In a large pot, sauté the onions in olive oil until soft.
    2. Add the lentils, chickpeas, tomatoes, cilantro, parsley, and spices. Stir well.
    3. Pour in the broth and bring to a boil.
    4. Reduce the heat, cover, and simmer for about 30 minutes or until the lentils are tender.
    5. Season with salt and pepper to taste.
    6. Serve hot with lemon wedges on the side.
