EASY RICE RECIPES:



1. Veggie Fried Rice

Ingredients:

  • 2 cups cooked rice
  • 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
  • 2 tbsp soy sauce
  • 1 tbsp oil
  • 1 tsp garlic (minced)
  • 1 egg (optional)
  • Salt and pepper to taste
                                    

Instructions:

  1. Heat oil in a pan or wok. Add garlic and stir-fry until aromatic.
  2. Add mixed vegetables and stir-fry until slightly tender.
  3. Push the veggies to the side, crack an egg (if using), and scramble it.
  4. Add the cooked rice, soy sauce, salt, and pepper. Toss well.
  5. Serve hot as a quick, delicious meal.

2. Lemon Rice

Ingredients:

  • 2 cups cooked rice
  • 1 lemon (juice and zest)
  • 1/2 tsp mustard seeds
  • 2 tbsp peanuts or cashews
  • 1 green chili (chopped)
  • 2 tbsp oil
  • Salt to taste


Instructions:

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add peanuts or cashews.
  2. Add green chili and sauté for a minute.
  3. Mix in the cooked rice, lemon juice, zest, and salt.
  4. Toss well and serve as a tangy, refreshing dish.

3. Chicken and Rice Casserole

Ingredients:

  • 1 cup uncooked rice
  • 2 cups chicken stock
  • 1 cup shredded cooked chicken
  • 1/2 cup grated cheese
  • 1/2 cup chopped vegetables (carrots, broccoli, or peas)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste


Instructions:

  1. Preheat oven to 180°C (350°F).
  2. In a baking dish, combine uncooked rice, chicken stock, shredded chicken, vegetables, and garlic powder. Season with salt and pepper.
  3. Cover with foil and bake for 30-35 minutes.
  4. Remove foil, sprinkle cheese on top, and bake for another 5 minutes until cheese melts.
  5. Serve hot for a hearty meal.
