EASY RICE RECIPES:
1. Veggie Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 cup mixed vegetables (carrots, peas, corn, bell peppers)
- 2 tbsp soy sauce
- 1 tbsp oil
- 1 tsp garlic (minced)
- 1 egg (optional)
- Salt and pepper to taste
Instructions:
- Heat oil in a pan or wok. Add garlic and stir-fry until aromatic.
- Add mixed vegetables and stir-fry until slightly tender.
- Push the veggies to the side, crack an egg (if using), and scramble it.
- Add the cooked rice, soy sauce, salt, and pepper. Toss well.
- Serve hot as a quick, delicious meal.
2. Lemon Rice
Ingredients:
- 2 cups cooked rice
- 1 lemon (juice and zest)
- 1/2 tsp mustard seeds
- 2 tbsp peanuts or cashews
- 1 green chili (chopped)
- 2 tbsp oil
- Salt to taste
Instructions:
- Heat oil in a pan and add mustard seeds. Once they splutter, add peanuts or cashews.
- Add green chili and sauté for a minute.
- Mix in the cooked rice, lemon juice, zest, and salt.
- Toss well and serve as a tangy, refreshing dish.
3. Chicken and Rice Casserole
Ingredients:
- 1 cup uncooked rice
- 2 cups chicken stock
- 1 cup shredded cooked chicken
- 1/2 cup grated cheese
- 1/2 cup chopped vegetables (carrots, broccoli, or peas)
- 1/2 tsp garlic powder
- Salt and pepper to taste
Instructions:
- Preheat oven to 180°C (350°F).
- In a baking dish, combine uncooked rice, chicken stock, shredded chicken, vegetables, and garlic powder. Season with salt and pepper.
- Cover with foil and bake for 30-35 minutes.
- Remove foil, sprinkle cheese on top, and bake for another 5 minutes until cheese melts.
- Serve hot for a hearty meal.
